American style raspberry pancakes
Would you like to try something different for pancake Tuesday this year? If so I can highly recommend these American pancakes with raspberries. I tried this the other day and the whole family loved it! The raspberries adds a nice slightly sour flavor which matches perfectly with the sweet maple syrup.
Makes 8 or more if you want to make them smaller
210 g / 1.5 cup of self raising flour (you can also use 210 g plain flour + 2 tsp baking powder)
1/2 tsp salt
2 tbsp sugar
Zest of 1/2 lemon (optional)
250 ml milk
1 large egg
1/2 tsp vanilla paste or extract
2 tbsp butter
A handful och frozen raspberries
Mix all the dry ingredients in a bowl. Set aside.
In a jug, mix the milk egg and vanilla. Melt the butter in the pan you intend to use for the pancakes (I usually use a small frying pan). Add the melted butter to the milk and egg mixture and whisk around. Add it all to the dry ingredients and stir until smooth. Finally add the raspberries and gently fold them into the mixture.
Fry the pancakes at medium heat until golden on both sides.
Serve with maple syrup and a few raspberries on the side.

These pancakes were an experiment I tried just the other day for my son’s birthday. He was a little skeptical at first, but soon enough he had gobbled up 4 of them!
