My Story

I’m Mirjam (pronounced Miriam, it’s just the Swedish spelling), and I run a small home-baking business. I mainly bake sourdough bread, Swedish cinnamon buns, cakes, tarts, desserts and celebration cakes. But I also make my own preserves, such as marmalade, jam and chutney. Everything is made in my kitchen, in a home I share with my husband and our three children, located in the beautiful countryside outside Carrick-on-Suir, co Tipperary. I also have 8 wonderful hens who provide us with the most amazing eggs.

I’m from Sweden, and my husband is Japanese, so we’re a fairly international family. I lived most of my teenage years in Lima, Peru. Years that had a big impact on me and nurtured my interest in different cultures. Both of us have lived in Ireland for over 15 years, and I feel very much at home here. But my baking and cooking are definitely influenced by both our cultures and my time in Peru as well. 

I grew up in a house where baking your own bread and cakes and making your own jam and cordial came naturally to both my parents. My mother would often do the weekly baking on a Saturday morning, stocking the freezer with bread and some sweet treats. Both my parents, my father, in particular, have always loved foraging. So we would go to the woods to pick wild blueberries and lingonberries, and my dad would make jam from them. As a teenager I became more interested in baking. I would often make a cake or dessert if we had visitors and make my own birthday cakes. And sometimes my family member’s birthday cakes as well. The older I got, the more I would add to my baking repertoire.

But it was always just a hobby until the spring of 2021. I had been off work due to stress for some months and felt I needed a change. At this point I had started baking sourdough, sharing it with friends and also baked the odd birthday cake for my friend children’s birthdays. So with the support from my family, I took a leap of faith and decided to give the baking a real chance. And so Mirjam’s kitchen came to life. 

MY STORY

Sourdough bread

I had noticed that there was no one in the area baking sourdough bread, yet I knew it’s a bread many people like but feel they don’t have time to bake themselves. Did you know it takes 48 hours to make sourdough bread from start to finish? And that’s not including the time it takes to make the actual sourdough starter.

The first product I sold was a loaf a sourdough bread and still it’s one of my most popular products. All the bread is made using my sourdough starter that I’ve managed to keep going since 2018.

Birthday Cakes

Once I started to get more orders for birthday cakes, I thought to myself that I really wanted to make them look different from the birthday cakes I would see in shops. And I thought it would be nice to decorate with edible flowers. I started off with pansies, as I knew one could get them in many different colours. Pansies are still one of my favourites, but now I also grow calendula (a great all-year-round flower), cornflowers and French marigolds in the summertime. I also try to dry my flowers so I can use them in the wintertime.

Nature’s touch

It always makes me so happy to hear from customers who really appreciate the flowers on my cakes. I also grow my own rhubarb that I use for my tarts. I have also started to grow raspberries and blackcurrants, I hope that one day I will have enough for both jam making and cakes. I dream about having my own little orchard where I could grow my own fruit trees. Imagine making apple tarts using my own apples.. hopefully one day this dream will come true.
