Blackberry Jam
Are you like me, someone who likes to pick blackberries when you go for a walk? Even though blackberry season has ended, you might have some in the freezer. If not, you can always find it in the supermarket😊 Either way, I thought I’d share my best recipe for blackberry jam.
Blackberry jam with a hint of ginger and vanilla
500 g blackberries, fresh or frozen
250 g sugar
1 lemon, zest + 1 tbsp of the juice
A few centimetres of fresh ginger (optional)
1/2 tsp vanilla buns paste/extract
Wash the blackberries and pour them into a saucepan together with the sugar, lemon zest, peeled ginger and vanilla. Bring to boil then add the lemon juice.
Reduce the heat slightly and keep boiling for about 15 min. Mash the berries while boiling. Skim any scum that has risen to the surface before pouring the jam into sterilised jars. Enjoy on toasted sourdough bread💜
