Apple and Almond Slices

Many of you have really enjoyed my almond and apple slices. So, I thought I’d share the recipe if you wanted to try and make them yourself. They are really easy to make.😊

All you need is:

  • 2 apples (I like to use 1 eating and 1 cooking apple, but anything works)

  • 175 g soft butter 

  • 175 g caster sugar

  • 3 large eggs

  • 125 g self-raising flour 

  • 50 g ground almonds

  • A few drops of almond essence 

  • 1-2 tbsp of Demerara sugar

  • Apricot jam and toasted almond flakes 


Turn the oven on 180 C/ 160 fan. Line an 8” x 8” square tin. Peel and cut the apples into small pieces. Mix butter and sugar with an electric whisk until white and fluffy. Add one egg at a time. Fold in the flour, ground almonds and almond essence using a spatula. Spread out the mixture in the tin. Add the apple pieces and press them down slightly. Sprinkle the Demerara sugar on top.

Bake for about 25 minutes. Allow to cool completely before cutting into squares or slices. You would get 12 slices or 16 squares. Toast a handful of almond flakes in a dry frying pan. Watch carefully, as they can burn quite easily.

Put some apricot jam in a little bowl. Microwave for 30 seconds until warm and a bit runny. Brush the slices with the jam and add the toasted almond flakes. You can also sieve a bit of icing sugar on the top just before serving.🍏
